Chicken Parmesan

• 4 skinless, boneless chicken breast halves
• 1 tsp salt
• ½ tsp freshly ground black pepper
• 1 cup all-purpose flour
• 2 eggs, beaten
• 1 cup panko bread crumbs
• ½ cup grated Parmesan cheese
• 2 cups marinara sauce
• 1 cup shredded mozzarella cheese
• olive oil, for frying

Directions

1. 1Preheat oven to 450 degrees F (230 degrees C).
2. 2Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, then coat in a mixture of panko and Parmesan.
3. 3Heat olive oil in a large skillet over medium-high heat and cook chicken until golden brown on both sides, about 4 minutes per side.
4. 4Transfer chicken to a baking dish, top each piece with marinara and mozzarella.
5. 5Bake until the cheese is melted and bubbly and the chicken is cooked through, about 15 to 20 minutes.
